Ingredients
- 1 bunch asparagus, trimmed and cut into 1-inch pieces
- 1 avocado, diced
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon fresh lemon juice
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon sea salt
- Freshly ground black pepper, to taste
Directions
- Heat the olive oil in a large skillet over medium heat.
- Add the asparagus and garlic and cook for 2-3 minutes, stirring occasionally.
- Add the diced avocado and cook for another 2-3 minutes, stirring occasionally, until the asparagus is tender.
- Remove from heat and stir in the lemon juice, parsley, salt, and pepper.
- Serve warm.
