Ingredients

  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 1 avocado, diced
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon sea salt
  • Freshly ground black pepper, to taste

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the asparagus and garlic and cook for 2-3 minutes, stirring occasionally.
  3. Add the diced avocado and cook for another 2-3 minutes, stirring occasionally, until the asparagus is tender.
  4. Remove from heat and stir in the lemon juice, parsley, salt, and pepper.
  5. Serve warm.
