Ingredients
1 bunch asparagus, trimmed and cut into 1-inch pieces
1 avocado, diced
1 clove garlic, minced
1 tablespoon olive oil
1 teaspoon fresh lemon juice
1 tablespoon chopped fresh parsley
1/2 teaspoon sea salt
Freshly ground black pepper, to taste
Directions
Heat the olive oil in a large skillet over medium heat.
Add the asparagus and garlic and cook for 2-3 minutes, stirring occasionally.
Add the diced avocado and cook for another 2-3 minutes, stirring occasionally, until the asparagus is tender.
Remove from heat and stir in the lemon juice, parsley, salt, and pepper.
Serve warm.
