Ingredients
- 2 pounds Yukon gold potatoes, peeled and cut into 1-inch cubes
- 1/2 teaspoon salt
- 1/4 cup half-and-half
- 2 tablespoons butter
- 1/2 cup fresh spinach, chopped
- 1/2 cup sweet corn, cooked
Directions
- Place potatoes in a large pot and cover with cold water. Add the salt and bring to a boil.
- Reduce heat to medium and simmer until potatoes are fork tender, about 10 minutes.
- Drain potatoes and return to the pot. Add the half-and-half, butter, spinach and corn. Mash with a potato masher until smooth.
- Serve warm.
