Ingredients
- 1 cup red quinoa
- 2 cups vegetable broth
- 1 cup cherry tomatoes, quartered
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1 avocado, diced
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- Salt and pepper to taste
Directions
- In a medium saucepan, bring the vegetable broth to a boil.
- Add the quinoa and reduce the heat to low. Cover and simmer for 15 minutes, or until the quinoa is cooked through.
- Transfer the cooked quinoa to a large bowl and let cool.
- Add the tomatoes, onion, cilantro, avocado, olive oil, and lemon juice to the bowl. Toss to combine.
- Season with salt and pepper to taste and serve.
