Ingredients

  • 1 cup red quinoa
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, quartered
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 avocado, diced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste

Directions

  1. In a medium saucepan, bring the vegetable broth to a boil.
  2. Add the quinoa and reduce the heat to low. Cover and simmer for 15 minutes, or until the quinoa is cooked through.
  3. Transfer the cooked quinoa to a large bowl and let cool.
  4. Add the tomatoes, onion, cilantro, avocado, olive oil, and lemon juice to the bowl. Toss to combine.
  5. Season with salt and pepper to taste and serve.
