Directions
- In a large bowl, whisk together the flour, oats, baking powder, salt, cinnamon, nutmeg, and sugar.
- In a separate bowl, whisk together the milk, vanilla, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not over mix.
- Fold in the raisins, if using.
- Heat a large skillet or griddle over medium heat and lightly grease with butter or cooking spray.
- Drop the pancake batter onto the skillet, using 1/4 cup of batter per pancake.
- Cook for 2-3 minutes, until bubbles appear on the surface of the pancake. Flip and cook for an additional 2-3 minutes, or until golden brown.
