Ingredients

  • 2 cups of old fashioned oats
  • 1/2 cup of chopped nuts (almonds, walnuts, cashews)
  • 1/2 cup of dried fruit (raisins, cranberries, dates)
  • 1/4 cup of honey
  • 1 teaspoon of vanilla extract
  • 1/4 cup of melted coconut oil
  • 1/4 teaspoon of ground cinnamon

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a medium bowl, combine oats, nuts, and dried fruit.
  3. In a small bowl, mix together honey, vanilla extract, melted coconut oil, and cinnamon.
  4. Pour honey mixture over oat mixture and stir until everything is evenly coated.
  5. Line a baking sheet with parchment paper and spread oat mixture onto it.
  6. Bake in preheated oven for 15-20 minutes, stirring every 5 minutes.
  7. Remove from oven and let cool for 10 minutes.
  8. Cut into bars and enjoy!
