Fill a large pot with water and bring to a boil over high heat. Add the artichokes and reduce heat to medium. Simmer for 20 minutes or until the artichokes are tender.
Drain the artichokes and allow to cool slightly before handling. Cut the artichokes in half and remove the choke and inedible parts.
Heat the olive oil in a large skillet over medium heat. Add the artichokes, cut side down, and cook for 5 minutes or until lightly browned. Flip the artichokes and add the garlic, oregano, thyme, salt, and pepper.
Reduce heat to low and cover the skillet. Simmer for 5 minutes or until the artichokes are tender and the flavors have melded together.
Serve warm or at room temperature.
