Ingredients
- 4 large artichokes
- 1/2 cup olive oil
- 4 cloves garlic, minced
- 1 teaspoon oregano
- 1 teaspoon thyme
- Kosher salt and freshly ground pepper, to taste
Directions
- Fill a large pot with water and bring to a boil over high heat. Add the artichokes and reduce heat to medium. Simmer for 20 minutes or until the artichokes are tender.
- Drain the artichokes and allow to cool slightly before handling. Cut the artichokes in half and remove the choke and inedible parts.
- Heat the olive oil in a large skillet over medium heat. Add the artichokes, cut side down, and cook for 5 minutes or until lightly browned. Flip the artichokes and add the garlic, oregano, thyme, salt, and pepper.
- Reduce heat to low and cover the skillet. Simmer for 5 minutes or until the artichokes are tender and the flavors have melded together.
- Serve warm or at room temperature.
