Ingredients

  • 1 cup cooked quinoa
  • 1 cup diced cucumber
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper
  • 1/4 cup chopped parsley
  • 1/4 cup chopped mint
  • 1/4 cup olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • Salt and pepper, to taste

Directions

  1. In a large bowl, combine the quinoa, cucumber, tomatoes, onion, bell pepper, parsley, and mint.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
