Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ cups granulated sugar
  • 1 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup Seven-Up
  • 1 cup heavy cream
  • 1 cup powdered sugar
  • Assorted fruits (strawberries, blueberries, raspberries, etc.)

Directions

  1. Preheat oven to 350°F. Grease a 9x13-inch baking pan with butter or shortening.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a large bowl, combine sugar, oil, eggs, and vanilla extract. Beat until well blended.
  4. Gradually add the flour mixture to the large bowl, stirring until just combined.
  5. Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow cake to cool completely.
  7. In a medium bowl, combine Seven-Up, heavy cream, and powdered sugar. Beat until light and fluffy.
  8. Spread the Seven-Up mixture over the cooled cake.
  9. Top with fresh fruit.
  10. Serve immediately.
