Ingredients
- 2 large turnips, peeled and cubed
- 1 onion, peeled and diced
- 1 red pepper, diced
- 1/4 cup olive oil
- 1/4 cup white wine vinegar
- 2 tablespoons Dijon mustard
- 1 teaspoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh dill
Directions
- In a large bowl, combine the turnips, onion, and red pepper.
- In a small bowl, whisk together the olive oil, vinegar, mustard, honey, salt, and pepper.
- Pour the dressing over the vegetables and toss to combine.
- Add the parsley and dill and toss to combine.
- Refrigerate for at least 1 hour before serving.
