Ingredients

  • 2 large turnips, peeled and cubed
  • 1 onion, peeled and diced
  • 1 red pepper, diced
  • 1/4 cup olive oil
  • 1/4 cup white wine vinegar
  • 2 tablespoons Dijon mustard
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh dill

Directions

  1. In a large bowl, combine the turnips, onion, and red pepper.
  2. In a small bowl, whisk together the olive oil, vinegar, mustard, honey, salt, and pepper.
  3. Pour the dressing over the vegetables and toss to combine.
  4. Add the parsley and dill and toss to combine.
  5. Refrigerate for at least 1 hour before serving.
