- 2 green onions, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- 1/4 cup chopped cilantro
- 1 tablespoon cornstarch
- Salt and pepper to taste
- 4 sheets parchment paper
Directions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine soy sauce, sesame oil, ginger, garlic, and a pinch of salt and pepper. Stir well to combine.
- Place the chicken breasts in a shallow dish and pour the marinade over them. Cover and let marinate in the refrigerator for at least 30 minutes.
- In the meantime, prepare the vegetables by slicing the green onions, bell pepper, and julienned carrot.
- After marinating, remove the chicken from the bowl and reserve the marinade for later use.
- Place one chicken breast on each sheet of parchment paper. Sprinkle with cornstarch and top with a portion of the sliced vegetables and chopped cilantro.
- Fold the parchment paper over the chicken and vegetables, then crimp the edges to seal the packet.
- Transfer the wrapped chicken packets to a baking sheet and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
- While the chicken is baking, heat the reserved marinade in a small saucepan over medium heat. Cook for 5 minutes, or until the sauce thickens slightly.
- Once the chicken is done, remove from the oven and carefully open the parchment packets. Drizzle the cooked chicken with the thickened marinade before serving.
