Ingredients
2 medium zucchini, grated
1/2 cup feta cheese, crumbled
2 eggs, lightly beaten
1/4 cup all-purpose flour
1/4 cup chopped fresh parsley

1 teaspoon garlic powder
1/2 teaspoon baking powder
1/2 teaspoon salt

Directions
In a large bowl, combine the grated zucchini, feta cheese, eggs, flour, parsley, dill, garlic powder, baking powder, salt, and pepper.
Mix until all ingredients are evenly distributed.
In a large skillet, heat the olive oil over medium-high heat.
Using a spoon, drop 1/4 cup of the batter into the hot oil and cook until the fritters are golden brown, about 3 minutes per side.
Remove the fritters from the oil and place on a paper towel-lined plate to drain.
Repeat with the remaining batter.
Serve fritters warm with your favorite dipping sauce.
