Ingredients

  • 2 medium zucchini, grated
  • 1/2 cup feta cheese, crumbled
  • 2 eggs, lightly beaten
  • 1/4 cup all-purpose flour
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh dill
  • 1 teaspoon garlic powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil, for frying

Directions

  1. In a large bowl, combine the grated zucchini, feta cheese, eggs, flour, parsley, dill, garlic powder, baking powder, salt, and pepper.
  2. Mix until all ingredients are evenly distributed.
  3. In a large skillet, heat the olive oil over medium-high heat.
  4. Using a spoon, drop 1/4 cup of the batter into the hot oil and cook until the fritters are golden brown, about 3 minutes per side.
  5. Remove the fritters from the oil and place on a paper towel-lined plate to drain.
  6. Repeat with the remaining batter.
  7. Serve fritters warm with your favorite dipping sauce.
