Roasted Curried Cauliflower and Onion

Ingredients

  • 1 head cauliflower, cut into small florets
  • 1 large onion, cut into wedges
  • 2 tablespoons olive oil
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper to taste

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Spread cauliflower and onion on a baking sheet. Drizzle with olive oil and sprinkle with curry powder, cumin, coriander, salt and pepper.
  3. Bake in preheated oven for 20-25 minutes, stirring occasionally, until vegetables are tender and lightly browned.
  4. Serve hot.
