Ingredients
1 lb ground beef
1/2 onion, finely diced
2 cloves garlic, minced
1/4 cup salsa
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
8 small (6-inch) flour tortillas
1 cup shredded Mexican cheese blend
Vegetable oil for frying
Directions
In a large skillet over medium heat, cook the ground beef and onions until the beef is browned, about 7 minutes.
Add the garlic, salsa, chili powder, cumin, oregano, salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally.
Remove the skillet from the heat and set aside.
Wrap the tortillas in a damp paper towel and heat in the microwave for 30 seconds.
Spoon about 2 tablespoons of the beef mixture down the center of each tortilla.
Sprinkle about 1 tablespoon of cheese over the beef mixture.
Roll up the tortillas and place them seam side down on a plate.
In a large skillet, heat the oil over medium-high heat. Fry the taquitos for 2-3 minutes, or until they are golden brown.
Remove the taquitos from the oil and place them on a paper towel-lined plate to drain.
Serve the taquitos hot with your favorite toppings such as sour cream, guacamole, salsa, and/or cheese.
