These zesty pickled mushrooms are a perfect addition to any charcuterie board or salad. Made with a flavorful blend of vinegar, spices, and fresh mushrooms, these pickles are tangy, salty, and all-around delicious.

Ingredients

  • 1 lb mushrooms, cleaned and stems removed
  • 1 cup white vinegar
  • 1 cup water
  • 1/4 cup sugar
  • 2 garlic cloves, minced
  • 1 tbsp salt
  • 1 tsp black peppercorns
  • 1 tsp red pepper flakes
  • 1 bay leaf

Directions

  1. In a saucepan, combine vinegar, water, sugar, garlic, salt, peppercorns, red pepper flakes, and bay leaf.
  2. Bring the mixture to a boil, then reduce heat and simmer for 5 minutes.
  3. Add mushrooms to the saucepan and stir to coat. Cook for another 5 minutes.
  4. Remove from heat and let cool to room temperature.
  5. Transfer mushrooms and pickling liquid to a jar and refrigerate for at least 2 hours before serving.
