Ingredients

  • 1 cup wild rice
  • 1 cup brown rice
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups vegetable broth
  • 2 tablespoons chopped fresh parsley

Directions

  1. Rinse the wild rice and brown rice under cold water.
  2. In a large saucepan, heat the olive oil over medium heat.
  3. Add the chopped onion and minced garlic to the saucepan and sauté until the onion is translucent.
  4. Add the diced carrot, red bell pepper, and zucchini to the saucepan and cook for another 5 minutes, until the vegetables are slightly softened.
  5. Stir in the dried thyme, dried oregano, salt, and black pepper.
  6. Add the rinsed wild rice and brown rice to the saucepan and stir well to combine with the vegetables and spices.
  7. Pour in the vegetable broth and bring the mixture to a boil.
  8. Reduce the heat to low, cover the saucepan, and simmer for about 25 minutes, or until the rice is tender and all the liquid is absorbed.
  9. Remove the saucepan from the heat and let it sit, covered, for 5 minutes.
  10. Fluff the rice with a fork and stir in the chopped fresh parsley before serving.
