Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber, diced
  • 2 cups cherry tomatoes, halved
  • 1 bunch parsley, chopped
  • 1/2 cup mint leaves, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Directions

  1. Rinse the quinoa under cold water in a fine mesh strainer. This helps remove any bitterness that may be present.
  2. In a medium saucepan, bring the water to a boil. Add the quinoa and reduce heat to low. Cover and simmer for about 15 minutes, or until all the water has been absorbed and the quinoa is tender. Remove from heat and let it cool.
  3. In a large bowl, combine the cooled quinoa, diced cucumber, halved cherry tomatoes, chopped parsley, and mint leaves.
  4. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
  5. Pour the dressing over the quinoa mixture and toss well to combine. Make sure all the ingredients are coated with the dressing.
  6. Taste and adjust the seasonings if needed.
  7. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  8. Serve chilled and enjoy!
