Ingredients

  • 1 cup oat bran

  • 1 cup buttermilk
  • 1/4 cup vegetable oil

Directions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine oat bran, whole wheat flour, brown sugar, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, whisk together buttermilk, vegetable oil, honey, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. If using mix-ins, gently fold them into the batter.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
