Ingredients

  • 1 pound ground beef
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup sliced mushrooms
  • 1/2 cup diced carrots
  • 1/3 cup tomato paste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 pound wallaby meat, diced
  • 1/4 cup red wine
  • 1/2 cup beef broth

Directions

  1. In a large skillet over medium heat, cook the ground beef until it is no longer pink. Drain any excess fat.
  2. Add the onion, celery, mushrooms, carrots, tomato paste, garlic powder, oregano, basil, thyme, salt, and pepper. Cook, stirring occasionally, until the vegetables are soft and the beef is cooked through, about 10 minutes.
  3. Add the wallaby meat, red wine, and beef broth. Bring to a boil, then reduce the heat and simmer, stirring occasionally, for 10 minutes.
  4. Serve over mashed potatoes or rice.
