Ingredients
- 1 tablespoon olive oil
- 1/4 cup red onion, diced
- 1/2 cup bell pepper, diced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes
- 1/2 cup tomato sauce
- 1/2 cup mozzarella cheese, shredded
- 4 flour tortillas
Directions
- Preheat oven to 350 degrees F.
- Heat olive oil in a large skillet over medium-high heat. Add onions and bell peppers and sauté for 2-3 minutes.
- Add garlic powder, Italian seasoning, and red pepper flakes and continue to sauté for an additional 2 minutes.
- Add tomato sauce and let simmer for 5 minutes.
- Remove from heat and set aside.
- Sprinkle mozzarella cheese evenly over two of the tortillas.
- Top with the vegetable mixture and spread evenly over the cheese.
- Place the remaining two tortillas on top of the vegetable mixture and press down gently to form two pizzadillas.
- Place pizzadillas on a baking sheet and bake for 15-20 minutes or until cheese is melted and tortillas are golden brown.
- Remove from oven and let cool for 5 minutes before slicing and serving.
