Ingredients

  • 1 tablespoon olive oil
  • 1/4 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup tomato sauce
  • 1/2 cup mozzarella cheese, shredded
  • 4 flour tortillas

Directions

  1. Preheat oven to 350 degrees F.
  2. Heat olive oil in a large skillet over medium-high heat. Add onions and bell peppers and sauté for 2-3 minutes.
  3. Add garlic powder, Italian seasoning, and red pepper flakes and continue to sauté for an additional 2 minutes.
  4. Add tomato sauce and let simmer for 5 minutes.
  5. Remove from heat and set aside.
  6. Sprinkle mozzarella cheese evenly over two of the tortillas.
  7. Top with the vegetable mixture and spread evenly over the cheese.
  8. Place the remaining two tortillas on top of the vegetable mixture and press down gently to form two pizzadillas.
  9. Place pizzadillas on a baking sheet and bake for 15-20 minutes or until cheese is melted and tortillas are golden brown.
  10. Remove from oven and let cool for 5 minutes before slicing and serving.
