- 1 1/2 cups all-purpose flour
- 3/4 cup rolled oats
- 1/4 cup light brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda

- 1/2 cup vegetable oil

- 3/4 cup applesauce

Directions
- Preheat oven to 375°F.
- In a large bowl, mix together the flour, oats, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, whisk together the oil, egg, applesauce, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Line a muffin tin with 12 paper liners and fill each cup with the batter.
- Bake in preheated oven for 20-25 minutes, or until a toothpick inserted into the center of the muffin comes out clean.
