Ingredients
- 1 cup quinoa, rinsed and drained
- 2 teaspoons curry powder
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 cup raisins
- 1/2 cup orange juice
- 1/2 cup vegetable broth
- 1/2 cup toasted almonds, chopped
Directions
- In a medium saucepan, combine quinoa, curry powder, turmeric, cumin, and salt. Stir to combine.
- Add raisins, orange juice, and vegetable broth. Bring to a boil.
- Reduce heat to low and simmer, covered, until quinoa is cooked through, about 15 minutes.
- Stir in toasted almonds and serve.
