Curried Citrus Quinoa with Raisins and Toasted Almonds

Ingredients

  • 1 cup quinoa, rinsed and drained
  • 2 teaspoons curry powder
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 cup raisins
  • 1/2 cup orange juice
  • 1/2 cup vegetable broth
  • 1/2 cup toasted almonds, chopped

Directions

  1. In a medium saucepan, combine quinoa, curry powder, turmeric, cumin, and salt. Stir to combine.
  2. Add raisins, orange juice, and vegetable broth. Bring to a boil.
  3. Reduce heat to low and simmer, covered, until quinoa is cooked through, about 15 minutes.
  4. Stir in toasted almonds and serve.
