Ingredients

  • 2 slices of your favorite bread
  • 2 tablespoons of vegan mayonnaise
  • ¼ cup of cucumber, diced
  • ¼ cup of tomato, diced
  • ¼ cup of avocado, diced
  • 2 tablespoons of vegan cheese, grated
  • Salt and pepper to taste

Directions

  1. Toast the slices of bread.
  2. Spread the vegan mayonnaise over each slice of bread.
  3. Top with the diced cucumber, tomato, and avocado.
  4. Sprinkle the vegan cheese over the vegetables.
  5. Season with salt and pepper to taste.
