Ingredients
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup lemon juice
- 1 teaspoon lemon zest
Directions
- Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan with butter or cooking spray.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
- Stir in lemon juice and lemon zest. Add the flour mixture in small batches and stir until just combined.
- Pour the batter into the prepared pan and spread evenly. Bake for 55-60 minutes or until a toothpick inserted into the middle of the loaf comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
