Ingredients
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup butter, melted
- 1 cup buttermilk
- 1/4 cup honey
Directions
- In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda and salt.
- In a separate bowl, whisk together the butter, buttermilk and honey.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Heat a waffle iron according to the manufacturer's instructions.
- Spray the waffle iron with non-stick cooking spray.
- Pour the batter onto the waffle iron and close the lid.
- Cook until the cornbread is golden brown and crispy, about 5 minutes.
- Remove the cornbread from the waffle iron and let cool.
- Serve warm with butter and honey.
