Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup butter, melted
  • 1 cup buttermilk
  • 1/4 cup honey

Directions

  1. In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda and salt.
  2. In a separate bowl, whisk together the butter, buttermilk and honey.
  3. Add the wet ingredients to the dry ingredients and stir until just combined.
  4. Heat a waffle iron according to the manufacturer's instructions.
  5. Spray the waffle iron with non-stick cooking spray.
  6. Pour the batter onto the waffle iron and close the lid.
  7. Cook until the cornbread is golden brown and crispy, about 5 minutes.
  8. Remove the cornbread from the waffle iron and let cool.
  9. Serve warm with butter and honey.
