Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 cup lentils
  • 6 cups vegetable broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, carrots and celery and cook until softened, about 5 minutes.
  3. Add the lentils and vegetable broth and bring to a simmer.
  4. Stir in the Italian seasoning, salt and pepper.
  5. Simmer the soup for 20 minutes, or until the lentils and vegetables are tender.
  6. Serve hot with your favorite toppings.
