Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 1 cup lentils
- 6 cups vegetable broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, carrots and celery and cook until softened, about 5 minutes.
- Add the lentils and vegetable broth and bring to a simmer.
- Stir in the Italian seasoning, salt and pepper.
- Simmer the soup for 20 minutes, or until the lentils and vegetables are tender.
- Serve hot with your favorite toppings.
