Ingredients

  • 1 whole chicken, cut into 8 pieces
  • 1 teaspoon Salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh rosemary
  • 2 large carrots, cut into 1-inch slices
  • 1 large red onion, cut into 1-inch wedges
  • 1 large red bell pepper, cut into 1-inch pieces
  • 4 cloves garlic, minced

Directions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix together salt, pepper, and garlic powder. Rub the chicken pieces with the seasoning blend.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the chicken and brown on all sides, about 5 minutes.
  4. Add the rosemary, carrots, onion, bell pepper, and garlic. Cook, stirring occasionally, for 5 minutes.
  5. Transfer the skillet to the preheated oven and bake for 25 minutes, until the chicken is cooked through and the vegetables are tender.
