Ingredients

  • 1/2 lb. dried rice noodles
  • 1/4 cup vegetable oil
  • 3 cloves garlic, minced
  • 1/2 cup firm tofu, cubed
  • 1/4 cup peanuts, chopped
  • 1/4 cup bean sprouts
  • 1/4 cup scallions, chopped
  • 1/4 cup tamarind paste
  • 2 tablespoons fish sauce
  • 2 tablespoons palm sugar
  • 1 tablespoon chili paste
  • 1/4 cup fresh lime juice
  • 1/4 cup cilantro, chopped

Directions

  1. In a large pot of boiling water, cook the noodles for 8-10 minutes, or until tender.
  2. Drain and rinse the noodles with cold water and set aside.
  3. In a large skillet, heat the oil over medium heat.
  4. Add the garlic and tofu and cook for 2-3 minutes, stirring occasionally.
  5. Add the peanuts, bean sprouts, and scallions and continue to cook for 2-3 minutes.
  6. Add the tamarind paste, fish sauce, palm sugar, chili paste, and lime juice and stir to combine.
  7. Add the cooked noodles and toss to combine.
  8. Cook for 2-3 minutes, stirring occasionally.
  9. Serve hot, topped with cilantro.
