Ingredients
1/2 lb. dried rice noodles
1/4 cup vegetable oil
3 cloves garlic, minced
1/2 cup firm tofu, cubed
1/4 cup peanuts, chopped
1/4 cup bean sprouts
1/4 cup scallions, chopped
1/4 cup tamarind paste
2 tablespoons fish sauce
2 tablespoons palm sugar
1 tablespoon chili paste
1/4 cup fresh lime juice
1/4 cup cilantro, chopped
Directions
In a large pot of boiling water, cook the noodles for 8-10 minutes, or until tender.
Drain and rinse the noodles with cold water and set aside.
In a large skillet, heat the oil over medium heat.
Add the garlic and tofu and cook for 2-3 minutes, stirring occasionally.
Add the peanuts, bean sprouts, and scallions and continue to cook for 2-3 minutes.
Add the tamarind paste, fish sauce, palm sugar, chili paste, and lime juice and stir to combine.
Add the cooked noodles and toss to combine.
Cook for 2-3 minutes, stirring occasionally.
Serve hot, topped with cilantro.
