Ingredients
1 tablespoon olive oil
1 onion, chopped
2 carrots, chopped
2 cloves garlic, minced
2 tablespoons tomato paste
2 tablespoons all-purpose flour
1 teaspoon dried oregano
1 teaspoon ground paprika

3 cups chicken broth
1 bay leaf

Directions
Heat olive oil in a large pot over medium heat. Add the onion, carrots, and garlic and cook until the vegetables are softened, about 5 minutes.
Add the tomato paste, flour, oregano, paprika, and pepper and cook, stirring constantly, for 2 minutes.
Add the chicken broth, bay leaf, beets, and potatoes and bring to a boil. Reduce heat to low and simmer, stirring occasionally, for 30 minutes.
Add the chicken and cook for an additional 5 minutes.
Stir in the sour cream and season with salt to taste.
Serve hot.
