Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried oregano
  • 1 teaspoon ground paprika
  • 1/2 teaspoon ground black pepper
  • 3 cups chicken broth
  • 1 bay leaf
  • 2 medium beets, peeled and diced
  • 2 potatoes, peeled and diced
  • 2 cups cooked, diced chicken
  • 1 cup sour cream
  • Salt to taste

Directions

  1. Heat olive oil in a large pot over medium heat. Add the onion, carrots, and garlic and cook until the vegetables are softened, about 5 minutes.
  2. Add the tomato paste, flour, oregano, paprika, and pepper and cook, stirring constantly, for 2 minutes.
  3. Add the chicken broth, bay leaf, beets, and potatoes and bring to a boil. Reduce heat to low and simmer, stirring occasionally, for 30 minutes.
  4. Add the chicken and cook for an additional 5 minutes.
  5. Stir in the sour cream and season with salt to taste.
  6. Serve hot.
