Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 tablespoons all-purpose flour
- 1 teaspoon dried oregano
- 1 teaspoon ground paprika
- 1/2 teaspoon ground black pepper
- 3 cups chicken broth
- 1 bay leaf
- 2 medium beets, peeled and diced
- 2 potatoes, peeled and diced
- 2 cups cooked, diced chicken
- 1 cup sour cream
- Salt to taste
Directions
- Heat olive oil in a large pot over medium heat. Add the onion, carrots, and garlic and cook until the vegetables are softened, about 5 minutes.
- Add the tomato paste, flour, oregano, paprika, and pepper and cook, stirring constantly, for 2 minutes.
- Add the chicken broth, bay leaf, beets, and potatoes and bring to a boil. Reduce heat to low and simmer, stirring occasionally, for 30 minutes.
- Add the chicken and cook for an additional 5 minutes.
- Stir in the sour cream and season with salt to taste.
- Serve hot.
