Healthy Nutella Granola Bars

Ingredients

  • 1/2 cup nut butter
  • 1/4 cup coconut oil
  • 1/4 cup honey or maple syrup
  • 1/2 cup Nutella
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup mini chocolate chips (optional)

Directions

  1. Preheat oven to 350 degrees F.
  2. Line an 8x8 inch baking pan with parchment paper.
  3. In a medium saucepan, melt the nut butter, coconut oil, honey and Nutella over medium-low heat.
  4. Remove from heat and stir in the vanilla extract.
  5. In a large bowl, combine the oats, nuts (if using) and chocolate chips (if using).
  6. Pour the wet ingredients into the dry ingredients and mix until everything is combined.
  7. Spread the mixture into the prepared pan and press down to evenly spread it out.
  8. Bake for 25-30 minutes or until the edges are golden brown.
  9. Allow to cool completely before cutting into bars.
