Ingredients

  • 2 cups of spinach, chopped
  • 3 egg whites
  • 1/4 cup of oats
  • 1/4 cup of plain Greek yogurt
  • 1/4 teaspoon of baking powder
  • 1/4 teaspoon of garlic powder
  • 1/4 teaspoon of onion powder
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper

Directions

  1. Preheat the oven to 350°F and grease a muffin pan with non-stick cooking spray.
  2. In a large bowl, combine the chopped spinach, egg whites, oats, Greek yogurt, baking powder, garlic powder, onion powder, salt, and pepper.
  3. Mix the ingredients together until they are fully combined.
  4. Spoon the mixture into the muffin pan, filling each cup about 3/4 of the way full.
  5. Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center of a muffin comes out clean.
  6. Let the muffins cool for 5 minutes before transferring to a wire rack to cool completely.
