Ingredients

  • 4 boneless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup jerk seasoning
  • 1/4 cup coconut flakes
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 teaspoon ground cumin
  • 1/2 cup white wine
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Directions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, combine olive oil, jerk seasoning, coconut flakes, garlic, ginger, cumin, and white wine. Stir to combine.
  3. Add the chicken breasts to the bowl and mix until each piece is evenly coated.
  4. Transfer the chicken to a baking dish and bake for 30-35 minutes, or until chicken is cooked through.
  5. Remove from oven and let rest for 5 minutes. Sprinkle with fresh parsley before serving.
