Ingredients

  • 1 pound cooked pasta (penne, bow tie, orzo, etc.)
  • 1 avocado, diced
  • 1/2 cup cooked shrimp, chopped
  • 1/4 cup red onion, diced
  • 1/4 cup frozen corn
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper, to taste

Directions

  1. Cook the pasta according to package instructions.
  2. Drain and rinse with cold water.
  3. In a large bowl, combine the cooked pasta, avocado, shrimp, onion, corn, and parsley.
