Ingredients

  • 4 portobello mushrooms
  • 1/4 cup of red onions, finely chopped
  • 1/2 cup of pitted dates, chopped
  • 1/4 cup of extra-virgin olive oil
  • Salt and pepper to taste

Directions

  1. Preheat oven to 375°F.
  2. Clean mushrooms and remove stems.
  3. In a bowl, mix together red onions, dates, olive oil, salt and pepper.
  4. Stuff mushrooms with the mixture.
  5. Place stuffed mushrooms on a baking sheet and bake in the oven for 25 minutes.
  6. Remove from oven and serve warm.
