Ingredients
4 portobello mushrooms
1/4 cup of red onions, finely chopped
1/2 cup of pitted dates, chopped
1/4 cup of extra-virgin olive oil
Salt and pepper to taste
Directions
Preheat oven to 375°F.
Clean mushrooms and remove stems.
In a bowl, mix together red onions, dates, olive oil, salt and pepper.
Stuff mushrooms with the mixture.
Place stuffed mushrooms on a baking sheet and bake in the oven for 25 minutes.
Remove from oven and serve warm.
