Ingredients

  • 2 large eggs
  • 2 slices of bacon
  • 2 slices of cheese
  • 1/4 cup of diced bell peppers
  • 1/4 cup of diced onions
  • 1/4 cup of diced mushrooms
  • 1/4 cup of diced tomatoes
  • Salt and pepper to taste

Directions

  1. Heat a large skillet over medium-high heat.
  2. Add bacon to skillet and cook until crispy.
  3. Remove bacon from skillet and set aside.
  4. Add bell peppers, onions, mushrooms, and tomatoes to the skillet.
  5. Cook until vegetables are softened, about 5 minutes.
  6. Crack eggs into skillet and scramble with vegetables.
  7. Once eggs are cooked, add cheese slices and bacon.
  8. Stir to combine and season with salt and pepper.
  9. Divide the mixture into two equal portions.
  10. Serve warm in a brunch box with your favorite accompaniments.
