Ingredients

  • 1/4 cup olive oil
  • 3 tablespoons freshly squeezed lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 head of romaine lettuce, chopped
  • 1/2 cucumber, peeled and chopped
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/2 cup crumbled feta cheese
  • 1/2 cup pita chips

Directions

  1. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  2. In a large bowl, combine the lettuce, cucumber, tomatoes, parsley, and mint.
  3. Pour the dressing over the salad and toss to combine.
  4. Top with the feta cheese and pita chips.
  5. Serve immediately.
