Ingredients

  • 6 eggs
  • 1/2 cup cooked and diced sweet potato
  • 1/2 cup cooked and diced bell pepper
  • 1/4 cup cooked and diced onion
  • 1/4 cup cooked and diced spinach
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste

Directions

  1. Preheat oven to 350°F and grease a 12-cup muffin tin.
  2. In a medium bowl, whisk together the eggs, sweet potato, bell pepper, onion, spinach, garlic powder, salt, and pepper until combined.
  3. Divide the egg mixture evenly among the muffin cups.
  4. Bake for 20-25 minutes, or until the eggs are cooked through.
  5. Let cool for 5 minutes before serving.
