Ingredients
- 1 1/2 cups all-purpose flour
- 3/4 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup plain yogurt
- 1/4 cup vegetable oil
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen fruit of your choice
- 1/4 cup chopped nuts (optional)
Directions
- Preheat oven to 375°F. Line muffin tin with paper liners or spray with non-stick cooking spray.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix together the yogurt, oil, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Fold in the fruit and nuts, if using.
- Spoon the batter into the prepared muffin tin. Bake for 18-20 minutes, or until a toothpick inserted into a muffin comes out clean.
- Allow muffins to cool in the tin for 5 minutes before transferring to a cooling rack.
