Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup plain yogurt
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen fruit of your choice
  • 1/4 cup chopped nuts (optional)

Directions

  1. Preheat oven to 375°F. Line muffin tin with paper liners or spray with non-stick cooking spray.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, mix together the yogurt, oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Fold in the fruit and nuts, if using.
  6. Spoon the batter into the prepared muffin tin. Bake for 18-20 minutes, or until a toothpick inserted into a muffin comes out clean.
  7. Allow muffins to cool in the tin for 5 minutes before transferring to a cooling rack.
