Ingredients
- 1 tablespoon olive oil
- 1 small onion, diced

- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) diced tomatoes
- 1 cup cooked brown rice
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 4 large flour tortillas
- salsa and guacamole, for serving
Directions
- Heat olive oil in a large skillet over medium heat. Add onion, garlic, bell pepper, and jalapeno (if using) and cook until softened.
- Stir in cumin and chili powder and cook for another minute.
- Add black beans, diced tomatoes, and cooked brown rice. Stir everything together and cook for 5 minutes, until heated through.
- Place a tortilla on a clean surface and spoon about 1/4 of the bean mixture onto the center. Sprinkle with shredded cheese.
- Fold the sides of the tortilla over the filling, then roll it up tightly, starting from the bottom.
- Repeat the process with the remaining tortillas and filling.
- Heat a large skillet over medium heat and add the burritos, seam side down. Cook for 2-3 minutes on each side, until golden brown and crispy.
