Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 jalapeno, seeded and minced (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) diced tomatoes
  • 1 cup cooked brown rice
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 large flour tortillas
  • salsa and guacamole, for serving

Directions

  1. Heat olive oil in a large skillet over medium heat. Add onion, garlic, bell pepper, and jalapeno (if using) and cook until softened.
  2. Stir in cumin and chili powder and cook for another minute.
  3. Add black beans, diced tomatoes, and cooked brown rice. Stir everything together and cook for 5 minutes, until heated through.
  4. Place a tortilla on a clean surface and spoon about 1/4 of the bean mixture onto the center. Sprinkle with shredded cheese.
  5. Fold the sides of the tortilla over the filling, then roll it up tightly, starting from the bottom.
  6. Repeat the process with the remaining tortillas and filling.
  7. Heat a large skillet over medium heat and add the burritos, seam side down. Cook for 2-3 minutes on each side, until golden brown and crispy.
  8. Serve the burritos with salsa and guacamole on the side.
