Ingredients

  • 1 cup cooked black beans
  • 1 cup cooked brown rice
  • 1/2 cup salsa
  • 1/2 cup chopped bell pepper
  • 1/2 cup chopped onion
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 4 large flour tortillas
  • Shredded cheese (optional)

Directions

  1. In a medium bowl, mix together the beans, rice, salsa, bell pepper, onion, garlic powder, and cumin.
  2. Place a tortilla on a plate and spoon 1/4 of the bean mixture into the center of the tortilla.
  3. Fold in the sides of the tortilla, then roll up the tortilla to form a burrito.
  4. Repeat with the remaining tortillas.
  5. Place the burritos on a baking sheet and top with shredded cheese (optional).
  6. Bake at 350 degrees F for 15 minutes, or until the burritos are heated through and the cheese is melted.
