Ingredients

  • 1 package vegan shrimp
  • 1/2 cup lime juice
  • 1/2 cup diced tomatoes
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup diced jalapeños
  • 1/4 cup chopped cilantro
  • 1 avocado, diced

Directions

  1. In a medium bowl, mix together the vegan shrimp, lime juice, tomatoes, bell peppers, onions, jalapeños, and cilantro.
  2. Cover and refrigerate for at least 30 minutes.
  3. Just before serving, mix in the diced avocado.
  4. Serve chilled with tortilla chips, crackers, or a side of rice.
