- 1 avocado, diced
Directions
- In a medium bowl, mix together the vegan shrimp, lime juice, tomatoes, bell peppers, onions, jalapeños, and cilantro.
- Cover and refrigerate for at least 30 minutes.
- Just before serving, mix in the diced avocado.
- Serve chilled with tortilla chips, crackers, or a side of rice.
