Ingredients

  • 3 cups rolled oats
  • 1/4 cup almond flour
  • 2 scoops vanilla protein powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup milk of choice
  • 1/4 cup maple syrup or honey
  • 2 tablespoons melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • Optional toppings: nuts, seeds, dried fruit, yogurt, etc

Directions

  1. Preheat oven to 350°F.
  2. Combine oats, almond flour, protein powder, baking powder, cinnamon, and salt in a large bowl.
  3. In a separate bowl, whisk together milk, maple syrup, coconut oil, and vanilla extract.
  4. Pour wet ingredients into the dry ingredients and stir until combined.
  5. Transfer oatmeal mixture to a greased 9x13-inch baking dish.
