Ingredients

  • 1 head garlic
  • 2 tablespoons olive oil
  • 1 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the top off the head of garlic to expose the cloves. Place the garlic head in a small oven-safe dish.
  3. Drizzle the garlic head with the olive oil and season with salt and pepper. Cover the dish with foil and bake for 25 minutes.
  4. Allow the garlic to cool, then squeeze the cloves into a bowl and mash them into a paste.
  5. In a small bowl, combine the mashed garlic, mayonnaise, lemon juice, and Dijon mustard. Stir until everything is well combined.
  6. Taste and adjust seasoning with salt and pepper as needed.
  7. Serve the aioli on sandwiches, burgers, or as a dip.
