Ingredients

  • 1 cup vegan butter, melted
  • 1 cup light brown sugar
  • 1/2 cup white sugar
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg

Directions

  1. Preheat oven to 350°F. Grease a baking sheet and set aside.
  2. In a large bowl, mix together the melted vegan butter, light brown sugar, and white sugar until blended. Stir in the pumpkin puree and vanilla extract until combined.
  3. In a separate bowl, mix together the flour, baking soda, salt, cinnamon, and nutmeg. Slowly add the dry ingredients to the wet ingredients and mix until combined.
  4. Using a spoon or cookie scoop, drop cookie dough onto the prepared baking sheet. Bake for 10-15 minutes or until cookies are golden brown. Allow to cool on baking sheet for 5 minutes before transferring to a cooling rack.
