Ingredients

  • 1 pound ground pork
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon coriander
  • 2 jalapenos, diced
  • 2 large potatoes, diced
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (14.5 ounce) can beef broth
  • Salt and pepper, to taste

Directions

  1. Set the Instant Pot to sauté mode. Add the ground pork and cook until no longer pink.
  2. Add the onion, garlic, chili powder, cumin, oregano, and coriander. Cook until the onions are translucent.
  3. Add the jalapenos, potatoes, tomatoes, and beef broth. Stir to combine.
  4. Secure the lid on the Instant Pot and set the valve to sealing. Set to high pressure for 10 minutes.
  5. When the cooking time is complete, use a natural release to depressurize the Instant Pot. Carefully remove the lid and season with salt and pepper to taste.
  6. Serve hot and enjoy!
