Ingredients

  • 3 cups old fashioned oats
  • 3/4 cup sliced almonds
  • 1/2 cup shredded coconut
  • 1/2 cup honey
  • 1/4 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup dried cranberries (optional)

Directions

  1. Preheat oven to 350°F.
  2. In a large bowl, combine oats, almonds, and coconut.
  3. In a medium bowl, whisk together honey, coconut oil, vanilla extract, and salt until combined.
  4. Pour wet ingredients into dry ingredients and mix until everything is evenly coated.
  5. Spread the mixture onto a baking sheet lined with parchment paper.
  6. Bake for 10-15 minutes, stirring halfway through, until golden brown.
  7. Let cool completely before adding dried cranberries, if desired.
  8. Store in an airtight container at room temperature for up to two weeks.
