Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground red pepper
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1 (14.5 ounce) can diced tomatoes
  • 1 cup plain yogurt
  • 1 (16 ounce) package cubed paneer cheese
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the onion, garlic, ginger, garam masala, cumin, turmeric, cardamom, and red pepper. Cook until the onions are softened, about 5 minutes.
  2. Stir in the spinach and cook until heated through, about 3 minutes.
  3. Stir in the tomatoes and yogurt and bring to a simmer. Reduce the heat to low and add the paneer. Simmer for 15 minutes, stirring occasionally.
  4. Season with salt and pepper to taste.
  5. Serve hot with rice or naan.
