1 (10 ounce) package frozen chopped spinach, thawed and drained
1 (14.5 ounce) can diced tomatoes
1 cup plain yogurt
1 (16 ounce) package cubed paneer cheese
Salt and pepper to taste
Directions
Heat the olive oil in a large skillet over medium-high heat. Add the onion, garlic, ginger, garam masala, cumin, turmeric, cardamom, and red pepper. Cook until the onions are softened, about 5 minutes.
Stir in the spinach and cook until heated through, about 3 minutes.
Stir in the tomatoes and yogurt and bring to a simmer. Reduce the heat to low and add the paneer. Simmer for 15 minutes, stirring occasionally.
Season with salt and pepper to taste.
Serve hot with rice or naan.
