Ingredients

  • 2 pounds potatoes, peeled and diced
  • 1 cup vegan mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 cup finely chopped fresh dill
  • 1/2 cup finely chopped red onion
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped red bell pepper
  • Salt and pepper to taste

Directions

  1. Bring a large pot of salted water to a boil.
  2. Add the diced potatoes to the boiling water and cook until fork-tender, about 10-12 minutes.
  3. While the potatoes are cooking, prepare the dressing by combining the vegan mayonnaise, Dijon mustard, lemon juice, fresh dill, red onion, celery, and red bell pepper in a large bowl.
  4. Once the potatoes are cooked, drain them in a colander and rinse with cold water to cool them down.
  5. Add the cooled potatoes to the bowl with the dressing and gently toss until all the potatoes are coated.
  6. Season with salt and pepper to taste.
