Ingredients
- 1 cup vegan butter, softened
- 1 cup sugar
- 2 teaspoons anise extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup vegan chocolate chips, optional
Directions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the anise extract and mix until combined.
- In a separate bowl, whisk together the flour, baking powder and salt.
- Add the dry ingredients to the wet ingredients and mix until a soft dough forms.
- Fold in the chocolate chips, if using.
- Roll the dough into 1-inch (2.5 cm) balls and place on the prepared baking sheet.
- Bake for 10-12 minutes, or until lightly golden brown.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
