Creamy Cauliflower with Ginger Soup
Ingredients
1 cup vegan butter, softened
1 cup sugar
2 teaspoons anise extract
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup vegan chocolate chips, optional
Directions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, cream together the butter and sugar until light and fluffy.
Add the anise extract and mix until combined.
In a separate bowl, whisk together the flour, baking powder and salt.
Add the dry ingredients to the wet ingredients and mix until a soft dough forms.
Fold in the chocolate chips, if using.
Roll the dough into 1-inch (2.5 cm) balls and place on the prepared baking sheet.
Bake for 10-12 minutes, or until lightly golden brown.
Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

These cookies can be stored in an airtight container for up to 5 days.
This recipe can easily be doubled or tripled for larger batches.
