Grilled Portobello and Mozzarella Sandwich

Ingredients

  • 2 large portobello mushrooms, cleaned and sliced
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • 3 slices of mozzarella cheese
  • 4 slices of toasted bread

Directions

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, mix together the olive oil, garlic powder, oregano, salt, and pepper.
  3. Add the portobello mushrooms and toss to coat.
  4. Grill the mushrooms on each side for 2-3 minutes, or until tender.
  5. Remove the mushrooms from the grill and set aside.
  6. Toast the bread on the grill until lightly golden brown.
  7. Lay the toasted bread on a plate and top each slice with a slice of mozzarella cheese.
  8. Divide the grilled mushrooms among the four slices of bread.
  9. Top each sandwich with the remaining slice of bread.
  10. Serve warm.
