Ingredients

  • 1 head cauliflower, chopped into florets
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 4 cups vegetable broth
  • 1/4 cup heavy cream
  • Salt and pepper to taste

Directions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  3. Add the grated ginger and cauliflower and cook for 5 minutes, stirring frequently.
  4. Pour in the vegetable broth, bring to a boil, then reduce the heat and simmer for 20 minutes.
  5. Remove the soup from the heat and let it cool slightly.
  6. Carefully puree the soup in a blender or food processor until smooth.
  7. Return the soup to the pot and stir in the heavy cream.
  8. Season with salt and pepper to taste.
  9. Serve hot.
